At 50 sheets of 8.5" x 11", single sided black and white is $25.00 and single sided color is $27.50. That is the entire difference.
It is worth saying plainly because a lot of businesses still print letterhead in black to save money, on an assumption that was true twenty years ago and is not true here. Your logo has colors in it. Use them.

The volume break is real and the short run is not a trap — 50 sheets exists so a small practice or a new business can have proper letterhead without committing to a case of it. But if you know you will get through 500, the per-sheet price halves.
Designing a letterhead that still works as a letter
The most common problem with letterhead is that it was designed as a piece of graphic design rather than as a page somebody has to write on.
Leave the body alone. A deep header and a busy footer can squeeze the usable area to the point where an ordinary one-page letter runs onto two. Keep the header tight and put the detail — address, phone, web, registration numbers — in a slim footer.
Check it against your printer. If you are going to run letters through an office printer onto these sheets, that printer has a non-printable margin. Print a test letter onto a blank sheet and hold the two together against a window before you order 500.
Think about the second page. Long letters need a continuation sheet, which is usually the same stock with a much lighter header or none at all. Order those at the same time.
Leave room for signing. A signature block with three lines of clearance at the bottom is a small thing that makes the whole page feel considered.

Questions we get asked
Yes — 70lb matte text is a normal weight for that and takes toner well. Test a few sheets first, as every printer has its own margins and feed behavior.
Close, but card stock and text paper take ink differently, so the same file can read slightly differently on each. If an exact match matters, tell us and we will look at both together rather than assuming.
If your letters regularly run past one page, yes. It is the same order with a stripped-back header, and it is the difference between a two-page letter looking deliberate and looking like you ran out of paper.
Of course — but a phone number change means reprinting whatever is left in the box. If anything on the sheet is likely to change soon, order the smaller quantity now and the bigger one once it has settled.
